Khao Phat - Thai Fried Rice



This is a quick recipe for left-over rice. You can use brown rice if you want to for a healthier version.

KhaoPhat

Ingredients:

3 tblsp oil
1 tblsp garlic, chopped
1 medium onion, sliced
2 eggs (optional if you don't eat egg)
1 tomato, chopped
1/2 cup basil, minced
1 spring onion, chopped
2 tsp white soy sauce
1 tsp sugar
1 tsp white pepper
4 cups cooked rice, left in open for a few hours for any extra water to dry off

Serves 4

Method:

1. Heat oil in a pan and add garlic.

2. Add onions and cook for 1-2 min.

3. Break in the eggs (if using) and scramble them.

4. Stir in the rest of the ingredients - tomato, basil, soy sauce, sugar and pepper. Stir well.

5. Stir in rice. Cook for 2 minutes and serve immediately with cucumber slices and whole spring onions.

Tips

• Add a little lemon juice for a variation.

• Its good to use left-over rice as it is completely dried of any water.
