From when I became a fan of microwave and its ease Instant Dhokla has been for me. I have not made this dhokla in the recent past, but here it is for someone who likes the flavors of the original method.



2 cups Besan/Gram Flour
1 cup curd/Yoghurt
1/2 tsp soda
2 green chillies
1" ginger
2 tsp Salt or to taste
1/2 cup dhaniya leaves, chopped fine.
1/4 tsp Turmeric
1/2 cup oil
1/2 cup water
a pinch of Hing
a few curry leaves and 1 tsp Rai for tempering
grated coconut for garnish


1. Add curd to besan and keep it overnight for fermentation.

2. Grind chillies and ginger to a fine paste.

3. Heat water in a pan. When it starts to boil, add hing, turmeric, salt, chilli-ginger paste, soda, dhaniya leaves and oil. Allow this to boil for 50-60 sec.

4. Add this to the fermented besan and mix well.

5. Pour these contents into 2 pans.

6. Steam in a steamer at medium heat for about 20 min.

7. Cool and cut into pieces.

8. Heal a little oil in a ladel, add curry leaves and rai and pour this over the pieces.

9. Garnish with grated coconut and dhaniya leaves.
