Thai Yellow Curry
Ingredients:
1 can coconut milk
1 can yellow curry paste - can use store bought
2-3 cups mixed vegetables(broccoli, potatoes, onions, carrots, bamboo shoots etc)
1 tblsp oil
salt to taste
Serves 1-2
Method:
1. Chop all vegetables to bite-size pieces.
2. Heat oil in a pan and add yellow curry paste. Fry on medium heat till fragrant - about 3-4 min.
3. Add coconut milk and bring to a boil. Add all veggies and salt, simmer and let cook till the veggies are soft. Keep stirring occassionally.
4. Serve with rice / roti.
