Gatte Ki Sabzi


For Gatte
2 cups Besan
2 tblsp Ghee
1 tsp Ajwain
1/2 tsp Red Chilli Powder
1/2 tsp Garlic Paste
1/2 tsp Ginger Paste
Salt to taste

For Sabzi
1 Onion
1 tsp Jeera
1/4 tsp Turmeric
1 tsp Dhaniya Powder
1 tsp Amchur Powder
Salt to taste


Make Gatte
1. Knead all the ingredients by hand or Stand mixer to make a soft dough.

2. Divide the dough into 2 parts and roll it into a long 1 inch diameter pipe.

3. Boil water in a deep pan and put the rolls slowly in this pan ensuring that they dip completely.

4. Boil them for about 20-25 minutes turning them over once very carefully.

5. Remove them from the water. Keep the water aside as it can be used for the gravy of the subzi.

6. Cut the rolls into 1/2 inch slices.

Make Sabzi
1. In a pan, heat a little oil, add jeera and let it crackle. Saute onions.

2. Add Turmeric, Dhaniya, Red Chilli and Amchur powders. Let it sizzle for a few seconds.

3. Add the water saved earlier. Boil and add gatte.

4. Let it boil for a few minutes.


• Instead of adding water to the Sabzi, you can also add a mixture of Yoghurt, 1 tblsp Besan and the saved water.
