Poha



Poha is a breakfast that everyone in my house loves. It is healthy, filling and tasty.

Ingredients:

2 cups poha (flattened rice)
2 tbsps vegetable/ canola cooking oil
1/2 tsp Rai
1/2 tsp Jeera
2 green chillies slit lengthwise (optional)
1 medium onion chopped fine
1 large/2medium potatoes chopped
1/2 cup green peas
Pinch of turmeric powder
Juice of 1/2 a lime
Salt to taste
Chopped coriander to garnish
Handful of peanuts

Method:

1. Put poha in a sieve and wash under running water for 2 minutes. Keep aside to drain. The poha has to be soft but separate. If you soak too long, it will be all mushy. So take care when washing under water. If the poha is really soft to start with, I just sprinkle water on it slowly, mixing and checking. If the poha is thick, then you can comfortably soak in water for 30-40 sec.

2. Heat oil in a pan on a medium flame and add rai, jeera and green chillies.

3. Fry till the spluttering stops and then add onion. Fry till soft and translucent.

4. Add turmeric, fry for 15-20 sec. Then add potatoes and green peas. Cook for 4-5 minutes till the vegetables soften.

5. Add drained poha to the above mix and stir gently to blend all ingredients.

6. Cook for another minute. Turn off the fire. Pour lime juice and dhaniya lvs over the poha and mix well.

7. Garnish with peanuts and/or sev and serve while hot.

Tips

• Ideally use thick poha. If you are using thin poha, just sprinkle enough water to make the poha soggy and let it drain in a sieve. Don't pour running fast water on it as it will get too soggy.
