Ras Malai


15 oz Whole Milk Ricotta Cheese
1 1/4 cup sugar
1 pint Whole Milk Half and Half

A pinch of Saffron
1/4 tsp crushed Cardamom seeds
3-4 tsp blanched almonds
2 tblsp crushed pistachios


To make the Syrup:

1. Thicken the half and half by simmering on low heat for a few minutes.

2. Add 1 cup sugar, cardomom, saffron strands to the half and halff. Heat for a few minutes and allow to cool. Saffron adds a nice yellow color and flavor.

To make the Malai:

1. Mix 1/4 cup sugar to the Ricotta cheese using a hand mixer till its all smooth.

2. Spread this mixture in an oven dish. I used mini-muffin pans.

3. Bake on top rack at 350 F till it sets or until it turns lihgt brown. Keep a watch, if it bakes more then it darkens in color and doesn't taste so good.

4. Remove from oven and cool. Remove carefully with your hand and add them to the syrup. Let them stay immersed for about an hour.

5. Decorate with almonds and pistachios.
